You Put WHAT in Your Meatballs?

You should have seen the look on my best friend's face when I mentioned what I put in my meatballs. I'm having some now, by the way. Most people around here think these are high on the yuck factor, but what do they know? They are scared to try any. They probably don't like steak and kidney pie either. OK, enough stalling...I'll tell you. It was beef liver, also known as offal, but my friends spell it "awful" instead. Maybe that is because they didn't grow up on a farm. I like most of the offal meats, including heart and tongue. A little liver goes a long ways, so I didn't put much of it in the meatballs. They are mostly ground beef and pork sausage, with just a little liver. I coated them in oat flour before sauteing. Many meatball recipes call for ground veal, but I take issue with the way the veal calves are treated. I don't like to torture my food before I eat it. Some anti-veal activists go as far as boycotting all dairy products because they call veal a by-product of the dairy industry. I agree that the dairy industry has some dirty laundry, but I cannot go that far. Milk and cheese are too vital to my existence to give up. But I can give up veal. That's why I put liver in my meatballs.

According to the Wikipedia article, linked hereto, the American Veal Association has admitted that the practice of feeding veal calves in the U.S. synthetic testosterone has been going for 30 years. The USDA does not approve of using hormones or antibiotics in the production of veal, so this is illegal.

I'm not sure I've ever tasted liver, so I have no feelings about it. My husband would shoot me dead though if I tried to feed it to him. ;) I assume it's pretty healthy though, you've piqued my curiousity.

Some people do have a pretty serious hatred of organ meats! One of my friends, however, has a husband who loves liver and orders it when we go out to eat. Others at the table say "Ewwwww!"
Hmmm, I hate liver but I know that it is supposed to be high in iron. MAYBE?? I'll try your recipe??? I used to feed it to our dogs and they loved it. Now, the butcher seems to think that it is a delicacy and is charging too much for it so we have switched to some organic dog food made right here in the Okanagan. We have friends working there so we know what we are getting is good.

Lol, don't put very much in or you'll be disappointed, but the dogs will yum down on the leftovers! Yes, it is full of iron and other goodies.
I have tasted liver and it's a place that I ain't visiting again fast!
